I'm back! Sorry about the extended absence, December was just very busy. Hopefully you were too busy cooking all your favorites that you didn't have time to miss me :)
Our family had a wonderful month of eating and visiting and more eating! By the time we got home from our last vacation, my husband and I were feeling the effects of all the sugar and no sleep. We decided to start the year off with the South Beach Phase 1. That is the hard one--2 weeks of no bread, rice, potatoes, pasta or baked goods, no fruit, candy, cake, cookies, ice cream or sugar. Yeah, all the things I like. You do however get lots of vegetables, dairy and meats. So, this is our "detox" from sugar time to get us back on track.
After two days however, my hubby is ready to quit! Of course he has already lost 5 lbs! It just doesn't seem fair sometimes how quickly he can drop the weight when I really have to work at it. I haven't lost anything yet, but after this post I am heading to the gym.
This month I will also start training for the 1/2 marathon that I will run in April. I am very excited about that! I lost most of my weight last year training for the same event and I hope to cut my last 15 lbs this year. I already have more energy to keep up with my kids and that is a wonderful blessing.
So, here are some of the recipes you can look forward to this week:
* Vegetable Quiche Cups To Go
* Deli Roll Ups (super easy)
* Balsamic Chicken
* Surprise South Beach Mashed "Potatoes"
