Pork Roulade and a dessert, Finally!

Well, I have worked on this post over the week and am finally ready to post it. I hope you enjoy these recipes.

Super Easy roasted potatoes
* 5 to 6 potatoes, washed and cut up (peel or don't peel, doesn't matter)
* 1 package onion soup mix
* 1/3 cup vegetable oil

Mix all of the ingredients in a 9 x 13 baking dish and then cook in a preheated 350 degree oven for 45 minutes. Stir occasionally. Easy!

Pork Loin Roulade

* 4 boneless center pork loin slices, about 1 pound (the ones I bought were too skinny, so get a thicker cut, at least 1/2 inch)
* 1/2 red bell pepper, cut into strips
* 1/2 green bell pepper, cut into strips
* 1 tablespoon vegetable oil
* 2/3 cup orange juice
* 2/3 cup bottled barbecue sauce
* 1 tablespoon Dijon mustard

1. Place pork slices between 2 pieces of plastic wrap. Pound with a mallet to about 1/4-inch thickness.

2. Place several bell pepper strips crosswise on each pork slice (just realized I probably didn't go crosswise? It still tasted good). Roll up jelly-roll style and secure with wooden toothpicks.

3. In a large skillet, brown pork rolls in hot oil. Drain Fat from pan. Combine remaining ingredients and add to skillet. Bring mixture to a boil; reduce heat to low. Cover and simmer 10 to 12 minutes or until pork is tender.

4. The recipe says to "remove toothpicks and serve" I just left them in and everyone removed their own. It saved on a serving utensil. See how informal we are at my house *wink*!

Some pudding concoction :)

Ok, my good friend Laura made some yummy thing a while back and I never got around to asking for the recipe. So, I thought I would make something up. This was good, but the left overs were mushy and nasty, so if you try this eat it all at once. Also, Laura, if you are reading this, please send me your recipe. Thanks!

* 2 large packages instant chocolate pudding
* Philo pastry sheets

1. Mix the pudding and set it in the fridge until ready.
2. Bake the philo sheets according to package directions. My family thought I used too many of them, so try doing 5 on the bottom, 5 in the middle and 5 on the top. You have to bake three separate batches because they are so thin that you will not be able to separate them afterward.
3. Layer the pastry, pudding, pastry, pudding and top with pastry. I then sprinkled it with powdered sugar and a little left over cocoa sauce I had from something else. Cut and eat.

I do read your blogs... I almost forgot about that recipe... I will have to look around for that one. I can tell you it was a lot of work so I know it wasn't a pudding recipe. And thanks for talking about me so much! It helps me keep my big head!
