Running and Cooking class update

I have been getting out and running more regularly, even though I haven't been blogging about it. Today however is a blog worthy moment. I got out and ran before it started raining, and since I knew my hubby had to leave for work early I decided to only do two miles. Here is the pat on the back moment for me. Since I was doing a short distance I wanted to push myself and run it as fast as I could. Remember that I live in a hilly area and it is up an down the whole time. I ran the first mile in 8:54! Then I managed to keep running and did the entire 2 miles in 18:50 for an average of a 9 1/2 minute miles. Tiny improvements that make me happy, and I felt great afterward!

Today in class we talked about nutrition and serving sizes. We actually measured out serving sizes so the students could see what a serving was for different things (thanks for the idea Lindsay!). Then we made the Strawberry Blintzes . This has a "healthy" choice of a filling. I think the kids enjoyed it, but one was brave enough to say it needed to be sweeter so we talked about alternative fillings they could use. I really enjoy this class.
