Mexican Lasagna/Tuna Wraps

I don't think I am going to post this recipe because none of us liked it. It smelled wonderful while it was cooking and it was easy to make, but it just didn't deliver on flavor. And it was mushy. Really mushy. Kind of like a multicolored mashed potato dish with chunks of meat in it. Yick! Anyway, I finally sat down and typed up the Master shopping list. You can find it in my file box HERE .

Although my hubby didn't like it, I think lunch went much better than dinner. We had these yummy looking spinach tortillas and I chopped up lots of veggies to fill them with. Carrots, celery, green bell pepper, tomato and lettuce. Then I put some tuna in them and topped it with Ranch or Honey Mustard dressing. I also sprinkled Italian seasoning on them. I thought they were pretty good. It would have been better with grilled chicken, but I didn't have that much time. I know my husband would have prefered that, he hates tuna!
Ok, I am much more motivated this week than I have been in a long time. I actually went running yesterday! Yay! If it stops raining today before it gets dark I'm going to get another run in today. I want to run or walk every day this week to get back in the habit. I had a friend ask me if I knew any runners who would be willing to go on the long runs with her on Saturday. She is training for a 1/2 marathon in December. I figured I would do it with her to get myself moving again. So this week I need to get my body to remember what running feels like. We plan to do 6 miles this weekend.
