Cornish Hens

What a beautiful day today! We took a 100 mile drive to visit a zoo and had a great day as a family. That's why this post is so very late. Last night I decided to give my kitchen experiment a try. I've never tried cooking Cornish hens, but always wanted to. I have to admit that I was really lazy and only glanced at a few recipes and couldn't even pick one to try. Granted, every time I tried someone needed my attention elsewhere. So, I decided to treat them like little turkeys and get them in the oven as quickly as possible.


The good news was that most of my family ate them and like it. I had to pull the meat off for the girls before they would eat it, but my husband thought it turned out really well.


Cornish Hens
*Cornish game hens (I made 4)
*1 clove garlic per hen, quartered
*1 bunch green onion, coarsely chopped
*1 slice bacon per hen
*1 tablespoon rubbed sage (fresh would be better if you have it)
*1 tablespoon chopped parsley
1. I washed and patted dry the hens (remove giblets if included)
2. Mix the sage and parsley together. Peel back the skin on the breast and rub with the mixture, replace skin.
3. Generously salt the inside cavity. Stuff the garlic, green onion and bacon inside. Brush the whole hen with olive oil or butter.
4. I just placed them on a pan sprayed with pam and baked them at 375 degrees for one hour. You should probably tie the legs and do the wing thing (how do you like those technical terms?) but I can never figure out how to do it, so...(and they cooked just fine anyway).
5. Half way through the cooking time, pull them out and brush with the oil or butter again. After an hour place a meat thermometer in the thickest part. When it reaches an inner temp of 180 it is done.
