Tater Tot Casserole

I made this, but forgot to take pictures. Normally, you see the tater tots on top, but this one had them on the bottom. The kids liked it, but asked that I leave the mushrooms out next time. I guess that's fine if they will eat it, but I think it will just be a big pile of mush.

My take: It tasted fine. Creamy, a bit on the rich side. I tried to guesstimate 32 oz of tater tots and think I didn't use enough. Personally, I like a little more texture to my food, but the flavor was good.

Tater Tot Casserole

32. oz package frozen Tater Tots
1/2 lb. browned ground beef
16 oz. container sour cream
1 cup shredded cheddar cheese
1 can cream of mushroom soup
1 can cream of chicken soup
4 oz. can mushrooms, drained
1 sauteed onions
6 oz. can French fried onions--I left off because my kids won't eat them, but I bet it makes it taste better!

Preheat oven to 350°F. Grease a 9x13 casserole pan. Place frozen tater tots in bottom of pan. Sprinkle beef over tater tots. In a bowl, mix sour cream, cheese, soups, mushrooms, and sauteed onions. Pour over beef. Top with French fried onions. Bake for 50-60 minutes.

We love this casserole. It is one of our favorites. You can use practically any type of cream soup in it and one of the ways I like to make it is with broccoli cheese soup. It makes it really good. My kids would agree with yours completely over the mushrooms. They won't eat onions either, so I have discovered dehydrated ones. Gotta love this and it is so easy to prepare!!!

LOL, I chop my onions as tiny as possible because mine don't like it either. I used to use the dehydrated ones all the time, but I've slowly snuck(?) in the real thing.
