Thrifty Thursday--Homemade Burritoes

OMGoodness! Can you handle a recipe? I know I haven't blogged for a month, so I'm going to update my attempts to lose weight this summer and post a recipe.

First, I started out great with the summer fitness goal. The first week I maintained my calorie goals and ran four days out of the week. I lost 2 lbs! I was so excited. Then I went to the pool with my kids and did something to my back. Days followed where I could barely move. Then we had cub camp, made a wedding cake, and started teaching cooking classes 3 days a week. Throw in a trip to TN in there and June was CRAZY! I have not run since hurting my back, but maintained my calories so that I did not gain any weight. I'm starting fresh today.

Now, for a recipe. My family loves burritoes. Well, my kids do anyway. So, for a SUPER CHEAP easy meal, try this.

You can buy canned refried beans for around $1, or you can make a pot of beans and use some for this recipe--saving the rest for other recipes. 1lb bag of beans is around $1.25

I made mine (just follow package directions) and then blended them with some of the soupy juice. Next I added half a package of taco seasoning for flavor. You can add more or less to taste.

Next up? The flour tortilla.
All you need is flour, water, and vegetable oil. Here is where it gets tricky, because I don't measure.
I think I did 3 cups all purpose flour
3 Tablespoons oil
and enough water to make a dough (the picture looks like 1 and a half cups)

Mix into dough, divide into smaller portions and roll out. Use plenty of flour to keep from sticking. NOTE: I've been told I do this wrong. I should have a press (said person told me how to build such a contraption), but rolling works for me so!
This is so you can see how thin I roll it.
Sprinkle salt into a pan on med-high heat. The salt keeps the dough from sticking and "salts" it for you. You will have to sprinkle more salt every once in a while as you cook.
Ooo, bubbly! Cook until one side is lightly browned and then flip it.
My pan cooks unevenly. :)
Make a bunch and then top them with whatever your family likes.
