Sweet and Sour Meatballs

This recipe was so easy I feel silly posting it, but I will because it was yummy! I bought premade frozen meatballs to save on time (since my head is still not in cooking mode), but feel free to make your own homemade meatballs if you like.
It even looks good as cold leftovers. I was in a hurry for the picture.

Sweet and Sour Meatballs

• 1 can of crushed pineapples (I used a 14oz can)
• 1 tbsp corn starch
• 1/2 cup brown sugar
• 1/4 cup vinegar
• 1 tbsp soy sauce
• 24 meatballs

Mix all ingredients except meatballs in a large saucepan and bring to a boil, stirring occasionally until well blended. Add meatballs. Simmer for -20-25min. I put them in before starting the rice to make sure they cooked long enough. If not using frozen meatballs, it will only take about 10 minutes. Serve over cooked rice.
