I like meatloaf. I don't know why, but I do. Unfortunately, my family has never liked meatloaf. It is frustrating. I've tried several recipes, used ground beef (of all fatty levels) and ground turkey. Nothing ever seems to entice my family to take more than one bite. Until now. Last night I decided to try one more time. As I thought about the meatloaf of our past, I concentrated on the only comments my husband made in relation to them. "It was a little dry" and "It taste like meat." Here is my solution.
* 3/4 pound lean ground beef (or turkey if you want)
* 1/2 pound pork sausage (I used a mildly flavored one, but feel free to try spicy if you like that)
* 1 egg
* 1 tablespoon instant minced onion (so my kids don't notice them, would taste great with diced onion)
* 3/4 cup dry bread crumbs (I used the Italian seasoned ones for more flavor)
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* 1/4 cup milk
* 1 tablespoon topping (see below)
1. Mix and mush everything together, place into a sprayed bread pan, spread the topping on, and bake for 1 hour in a preheated 350 degree oven.
Topping:
* 1/3 cup ketchup
* 3 tablespoons brown sugar
* 2 teaspoons mustard
1. Mix and spread on top of the meatloaf before baking.
