Cranberry Pork

This was a Sunday crock pot experiment. I had pork chops in the fridge that needed to be used, but I was tired of all my pork recipes. While browsing cookbooks I saw several recipes that were pork roasts with real cranberry sauce. I did not have all the ingredients for any of the recipes, so I improvised.
Cranberry Crock Pot Pork

* 4 one inch pork chops (a pork loin would be a great choice as well)
* 1 can beef broth
* 1 can jellied cranberry sauce
* 2 tablespoons soy sauce


I cut the pork chops up (to disguise them since my children have a problem with pork all of a sudden) and put them in the crock pot with the beef broth, soy sauce, and cranberry sauce. I let it cook on high for an hour and then turned it to low for another five hours. Everyone really liked it. It was simple and the sweetness of the cranberry sauce worked well with the salty soy sauce.

I like your cooking style, Charity! I am always making substitutions myself. I was embarrassed this week when a lady in our ward asked for a recipe I'd made her when she had her last baby because I had no idea how I'd made that particular batch of taco soup.

Heh, heh. I'm always doing that and I started writing things down as I go for the same reason you mentioned. Now if something turns out really good I can duplicate it.
