This is always yummy and doesn't require a lot of work because you can use boxed stuffing. I prepare the meat while the stuffing is sitting and then put it straight into the oven. It only takes about 10 minutes to prepare and then 30-35 minutes cook time.

* Pork chops (no bone, 1.5 inch thick or get the butterfly cut chops)
* 1 box stuffing mix (make according to box directions)
* extra celery and onion if you want
1. Preheat the oven to 375 degrees and cook the stuffing. (
I saute 1/2 cup chopped celery and 1/4 cup chopped onion in some butter for about 2-3 minutes until they are starting to get tender, then I add the water called for on the boxed stuffing. Bring it to a boil, add the bread crumbs, cover and remove from heat.)

2. While the stuffing is sitting, cut the pork chops along one side to open them up. Do not cut all the way through. So now instead of a fat pork chop you have a larger, thinner pork chop. This makes it easier to roll up. Sprinkle with salt and pepper and then put a spoon full of stuffing in the middle. Roll up and secure with a toothpick.

3. Bake at 375 until cooked through--about 30-35 minutes. See, EASY!
