Once again, sorry that I forgot to take pictures. I'll add them next time. This is however one of our favorite meals that I got out of a casserole cookbook a while back. It was submitted by Anita from Ohio.
* 1 lb ground beef
* 1 large onion, chopped
* 1 large green pepper, chopped
* 1 can (28 oz) diced tomatoes, undrained
* 1 can chili beans
* 1 can black beans, rinsed and drained
* 1 can whole kernel corn, drained
* 1 can (8 oz) tomato sauce
* 1 envelope taco seasoning
* 1 bag spicy nacho tortilla chips (Dorito's)
* 2 cups shredded cheddar cheese
1. In a large pan, brown the beef with the onion and green pepper. Drain off the fat, then stir in all remaining ingredients with the exception of the chips and cheese. Bring to a boil and then reduce heat and simmer for 30 minutes.
2. In a greased 13x9 baking dish, layer half the chips followed by half the meat mixture. Repeat layers and then top with the cheese.
3. Bake uncovered at 350 for 20-25 minutes.
