Smyrna Smash

Last night my husband made dinner for us, so he is the "Guest Chef of the Week"! It is always a treat when I don't have to cook. Usually when Nathan cooks we have Pizza Hut or some other take out, but last night he made a dish that everyone enjoyed. He perfected this dish while on his mission many years ago. The other missionaries dubbed it "Smyrna Smash" because Nathan was from Smyrna and the meal was a smash! The best thing about it? He used all the odds and ends left overs in the fridge to make it. The worst thing about it? There wasn't enough!

You can see that one side doesn't have green peppers (for the kids) and one side has mushrooms (for me!).
This is what you need:
Mashed potatoes
a can of whole kernel corn
hot dogs, sliced into rounds
green bell pepper, chopped
mushrooms
cheddar cheese

All you do is layer them in that order in a casserole dish and bake at 350 for about 15-20 minutes until warm all through and the cheese is lightly browned. Easy and surprisingly good!

Here is my favorite part: The mashed potatoes were an experiment from an earlier night. I made real mashed potatoes, but I also cooked some cauliflower until very soft. I blended the cauliflower and mixed it in with the potatoes when I mashed them. The kids never knew the difference! So I snuck in an extra veggie!

My awesome hubby also made some peanut butter cookies for dessert. I think he should get to use these talents more often!

Sneaky with the cauliflower!! Did you just mash it up with the potatoes or did you blend it in the blender? I will have to try that...my kids are so picky about eating veggies.

I make mashed cauliflower quite often because everyone loves it and there is never enough.
Steam 2 heads of cauliflower until completely tender ( if you leave it al dente, it will be runnier and less like mashed potato consistency) take out of steamer and put into bosh mixer. Add 1 Tbs. butter or margerine, salt and pepper to taste, and start mixing. Once it is thoroughly mixed add 2q Tbsp sour cream and 1bout 3/4 cup shredded cheese and mix again.
Serve.
No need to hide them in the potato's even my picky teenagers asked for more.
