I have been so lazy about posting lately that I just got around to reading the comments posted to some items. I did want to re post one of them because it will be helpful to many of you. First of all, Kristen S asked about how I put cauliflower in my mashed potatoes. I cooked them separate until they were very tender and then blended them up in the blender with a little milk. Then I added them to the mashed potatoes with butter and cheddar cheese...mmm.
K@Ashcroft made the following comment:
"I make mashed cauliflower quite often because everyone loves it and there is never enough.
Steam 2 heads of cauliflower until completely tender ( if you leave it al dente, it will be runnier and less like mashed potato consistency) take out of steamer and put into bosh mixer. Add 1 Tbs. butter or margarine, salt and pepper to taste, and start mixing. Once it is thoroughly mixed add 2q Tbsp sour cream and 1bout 3/4 cup shredded cheese and mix again. Serve. No need to hide them in the potato's even my picky teenagers asked for more."
I have done this as well, but unfortunately my family wasn't as excited about it. I thought they tasted great and they are much healthier for you. Hopefully one day my family will come around. My goal? Keeping sneaking it in and increasing the cauliflower amount until it is all cauliflower and they don't even know it! :)
I also wanted to tell Jen, THANK YOU for letting me know that you loved the pizza crust recipe . That made my day! We have also made the BBQ chicken and it is sooo yummy!
