Turkey Melts

Sorry this is so late in the day. My kids are home for a teacher workday and so my whole schedule is messed up :) Anyway, you may have noticed that I didn't post a menu yesterday. That is because I haven't sat down to make one yet, sorry, I'll get one for next week.

Consequently, last night was a "what are we going to eat?" We also wanted to go for a run together as a family, so it needed to be quick. We decided to run first at the Greenway (which is a nice paved trail through trees and by a river) and then come home and eat. We had a great time running, and dinner only took 10 minutes from fridge to table.

All you need is:
*Whole wheat sub rolls
*sliced deli meat of your choice
*cheese of your choice
*sandwich toppings of your choice

Here are the sandwiches before I put them in the oven. We used turkey and cheddar cheese. You can use slices too, but shredded melts faster. We were really hungry, so I put it in on Low Broil and just watched for the cheese to melt and the bread to toast lightly.

Everyone put different stuff on their sandwiches. I put BBQ sauce, lettuce and tomato and it was really yummy! As a side I made a sausage dip. I got the recipe from my good friend Shan.Sausage Dip:

*1 package sausage (I bought a mildly seasoned one, but make it as spicy as you want, just remember the Rotel is spicy too) Cooked until done.

*2 cans Rotel tomatoes

*1 package cream cheese

Mix the cooked sausage with the tomatoes and cream cheese until the cream cheese melts all through. Serve with chips. EASY! (My husband says it looks absolutely awful, but it tastes good)

I make something kinda like this with tomato and BBQ and mayo on it. We love them! I have never tried it on a sub, that looks great!
