Welcome to Motivational/menu Monday. First a thought to help motivate us to have a good week of exercise and better control with what and how much we eat. This is my friend Laura's favorite quote, it is by Bob Moawad. "You can't make footprints in the sands of time by sitting on your butt! And who wants to leave butt prints in the sands of time?"
As I sat at the bus stop this morning I worked on getting my menu ready so I can go grocery shopping this morning. When I came home both computers were having internet issues. I think we have now fixed both of those, yay! So, here is my menu for this week. I will put *'s by the recipes that I will post on the blog.
Day 1--Creamy Chicken and Rice Bake*, green salad and bread
Day 2--Nachos/Taco Salad
Day 3--Eggs on biscuits with sausage and hash browns
Day 4--BBQ Chicken with grilled sweet potatoes* (yes, we still haven't made this but we will!)
Day 5--We are having a huge cookout with friends (I'll collect recipes from some of the salads and desserts that my friends bring)
Day 6--Penne with Zucchini and spinach*, corn on the cob and rolls
Day 7--Roast in the crock pot with potatoes and carrots (my daughter really wants this)
I'm trying to keep this week pretty simple when it comes to the meals. Life seems to be getting really busy so I need more meals that I know my kids will eat and that do not take a lot of work on my part. Most of these are pretty cheap as well. I'll figure up the cost of each meal and post it on Thrifty Thursday. Great idea for a theme Laura!
