Birthday Roast and Potatoes

I know this is supposed to be "Whimsical Wednesday", but I didn't even know what day it was this morning. I was still on Tuesday. I guess this still falls into kid friendly simply because my kids eat it and if using a crock pot, you have lots of time to play with your kids instead of cooking. Also, my oldest daughter's birthday is this week and she asked for Roast and Potatoes. I planned on making it last Sunday, but never got around to it. Then I was going to put it in the crock pot on Monday. Once again, I waited to long to get it started, so I decided to do it the old way in the oven. I haven't cooked it that way in years! Anyway, after 2 hours in the oven it wasn't done the way I like so I dumped it in the crock pot and made the pasta that I posted yesterday. :) When cooking, be willing to change your mind. Unfortunately, my family was starving by the time we ate! 1. First, I mixed 1/2 cup flour with some spices. Use what you like. This time I had some fresh Rosemary thanks to my good friend Flori, so I used that and salt and pepper. I kept it simple. Then I rolled the roast in the flour mixture.
2. I heated about 3 tablespoons oil in a pan and when it was hot I added the roast. I browned it on all sides then put it in my baking dish. I would do these first two steps even if planning to put it in the crock pot.

3. I then put the following in the pan on the stove--1 cup water, 1 beef bouillon cube (or 1 teaspoon granules) 1 tablespoon Worcestershire sauce. I brought it to a boil then poured it over the beef.

4. If using a crock pot--put everything in the crock pot (meat, potatoes, carrots, onions) and cook on low for 10-12 hours. If using the oven--preheat the oven to 325 degrees. Cover the roast with foil and cook for 1 hour. Then take out and add the potatoes, carrots and onions; recover and cook for another hour or until the vegetables are tender.
I am not the best at picking out and buying meat, so the roast looked "firm" to me. I like it to fall apart in the crock pot so that it is nice and juicy. This roast never did and I was worried, but when we sat down to eat it, it was really good. It was still soft and juicy when I cut into it.

I wish I had a good coment for buying meat. But we buy the cheepest or on sale stuff. If you want really good meat you need to find a meat market. The kind taht only has meat. Now that is the good stuff!
